For many, the holidays will be a little different this year due to coronavirus. But just because you can’t gather around a table with your friends and fam this, that doesn’t mean Thanksgiving has to be a total bust… at least, not according to Ina Garten.
This year, the “Barefoot Contessa” says “when life gives you lemons, make… a smaller turkey.” While she usually celebrates the holidays with a feast in East Hampton, New York. this year it’s just Garten and her husband Jeffrey– so she’s come up with “Micro Thanksgiving” recipes for folks at home to try this year. Here they are:
- Chipotle Smashed Sweet Potatoes: Garten is doing away with the marshmallow and pecan toppings for sweet potatoes this time, instead giving it a little kick with chipotle chiles and adobo sauce. Just a small serving can pack a big punch, but you can mellow it out with some maple syrup.
- Herb and Apple Bread Pudding: Go for the smaller turkey, and forget the stuffing! Garten’s go-to is a savory bread pudding that “has all the flavor of traditional stuffing,” full of creamy bread and vegetables topped with crunchy cheesy bits. Plus, it takes way less time to cook.
- Potato Fennel Gratin:Ditch the mashed potatoes this year and go for a “rich and creamy” gratin! You can assemble it ahead of time with onions, fennel, and Gruyere cheese, and then pop it in the oven to bake right before dinner.
